AJWA Cappadocia combines the culinary journey of Anatolian civilizations covering thousands of years through this "Living Kitchen" approach.
This approach, which is based on the idea that "every dish has a story" ensures all guests are a part of the kitchen experience, which appeals not only to the tastebuds but also to the five senses.
Dishes include carp and catfish, which originate from Avanos and seasonal fruits and vegetables from the agricultural gardens on-site and/or local farmer's markets in Ürgüp and surrounding areas. Milk and dairy products are supplied from the dairy while the meat is procured daily by the chef from the local people raising livestock. The home-made jams and marmalades produced by the hotel introduce our guests to the rich and sweet culture of Azerbaijan.
In addition to world cuisine, Zeferan Restaurant offers exclusive taste experiences including authentic Anatolian dishes, Azerbaijani cuisine, and the immigrant food of Mustafapaşa Village known as Sinasos. In the Zeferan Restaurant, where there are no alcoholic beverages, orders for lunch and dinner accompanied by homemade sherbets with fragrant and aromatic properties are taken in the morning. These are then slowly prepared within wood fire tandoor and stone ovens and prepared for guests. Zeferan Restaurant is set in a magnificent space designed as a central courtyard, with a glass ceiling, crowning this culinary journey. Local cedars, rug-patterned chairs, and stone walls with electric kerosene lamps create a great atmosphere for an authentic banquet.
